In 1850, Pietro Malpighi entrusted his son Augusto with the family's most valuable inheritance: the recipe for real, genuine Traditional Balsamic Vinegar of Modena. That same recipe has passed from hand to hand for five generations since.

Grandmother Maria, then Ermes Malpighi, one of the founders of the Balsamic Vinegar Consortium and an official Master Taster, carried the family's craft forward and helped shape the standards the whole region follows today.
